Melitzanosalata is a creamy eggplant dip that is perfect for spreading on bread or crackers. It’s traditionally made with roasted eggplant, but you can also use grilled eggplant. To make melitzanosalata, you will need 1 eggplant, 2-3 garlic cloves, 2 tablespoons olive oil, 2 tablespoons lemon juice, salt and pepper to taste, and 1/2 cup chopped parsley. Roast or grill your eggplant until it is soft. Peel off the skin and mash the flesh with a fork or blend in a food processor. Mix in the garlic
Moutabalah Piatti Tipici Greci
Aubergines, tahini, garlic, lemon juice, and olive oil are blended together to create this smooth and creamy dip. It is delicious with pitta bread or vegetables for dipping.
